Another Winning Recipe from the 2007 Puyallup Fair Salsa Showdown

Here’s the second winner from Kathleen Seaton of Bonney Lace, WA:

2nd Place – Kat’s Kickin Chipolte Salsa

  1. 3 vine ripened tomatoes
  2. 3 Roma tomatoes
  3. 1 head of garlic roasted
  4. 1 red bell pepper roasted
  5. 1 yellow bell pepper roasted
  6. 3/4 cup sweet yellow onion diced
  7. 1 fresh peach finely diced
  8. 4 chipolte peppers in adobe sauce
  9. 2 tablespoons honey
  10. 1/2 teaspoon salt
  11. 1/2 cup cilantro
  12. 1 teaspoon sugar
  13. juice of 1 lime
  • Dice tomatoes, combine with onion and bell peppers. Set aside in bowl.
    In a food processor, combine garlic (squeezed out of peel), chipolte peppers, honey and lime juice. Pulse until mixture is a puree.
  • Add puree to tomato mix. Fold in salt, sugar and peaches.
  • Serve immediately or store in refrigerator for party time.
