2 tablespoons honey
1/2 teaspoon salt

<li>juice of 1 lime</li>
</ol>
<ul>
<li>Dice tomatoes, combine with onion and bell peppers.  Set aside in bowl.<br />
In a food processor, combine garlic (squeezed out of peel), chipolte peppers, honey and lime juice.  Pulse until mixture is a puree.</li>
<li>Add puree to tomato mix.  Fold in salt, sugar and peaches.</li>
<li>Serve immediately or store in refrigerator for party time.</li>

<p>There were a few really original recipes.  I especially like the one with strawberry and kiwi ingredients.</p>

<p>The train was a unique experience for sure. But not quite what I anticipated. The last train I rode was in Italy a couple of years ago, and prior to that Japan &#8211; a long time ago. Iâ€™d never ridden a train in the US. I expected something similar to Italy. The ride on this train was more like a ride at the fair.</p>
<p>Maybe it was the tracks. Or the fact that the train is an antique. Lots of character, but with all the rockâ€™in and rollâ€™in I worried my drink would spill (it didnâ€™t).</p>
<p>Eating was something of a challenge as well. We had the prime rib and it was good, but not excellent. I ordered a Merlot by the glass. Probably the worst wine Iâ€™ve ever tasted. I think the bottle must have had been open a long, long time.</p>
<p>It was warm the evening we went so I expected it to be hot. But the train was pleasantly air-conditioned. For a more basic experience thereâ€™s an open air car you can visit on the south end of the train.</p>
<p>All in all it was an enjoyable experience.  But like climbing Mt Fuji, something Iâ€™ll only do once.</p>
